Description
Here is a spicy crockpot jambalaya. Serve as a stew with a salad or serve over rice if you like some starch in your diet.
Ingredients
1 lb boneless, skinless chicken breast, cut into 1-inch cubes
1 lb andouille sausage, sliced
28 oz canned diced tomatoes w/ juice
1 onion, chopped
1 green bell pepper, chopped
1 jalapeno pepper (optional)
1 serrano pepper (optional)
2 c chopped celery
3 c chicken broth
2 t dried oregano
2 t dried parsley
2 t Cajun seasoning
1 t cayenne pepper
1⁄2 t dried thyme
1 lb cooked shrimp without tails

Instructions
Place chicken, sausage, tomatoes, onion, peppers, celery and broth in slow cooker. Mix together. Stir in oregano, parsley, Cajun seasoning, cayenne, and thyme. Cover and cook on low for 7-8 hours. Stir in the shrimp during the last 30 minutes of cooking time.
This makes a big batch of 10 servings!
